When handed a bowl of 'lemons,' roll ice cream

SIDNEY -- Of the many booths and vendors at Gold Rush Days, at least one offered a chance to stay cool in the Saturday heat. One specifically had a story behind his offering.
Almost a year ago, Adam Cochrane and his family had to make a decision.
"Last year, they changed the way they pay us at school. We set down. We prayed and prayed and prayed. The Lord blessed us with LeganDairy Rolled Ice Cream," Cochrane said.
For most people, when they hear the word griddle, the response is hot and often used over a fire. Not so with LeganDairy Rolled Ice Cream. They use a surface that freezes the ice cream mix as it is applied to the surface.
"We got an anti-griddle that goes 18 to 30 degrees below zero. We make our own ice cream base. We pour it on there and it freezes within a minute and a half and roll some ice cream.
Cochrane said LeganDairy Rolled Ice Cream is not a franchise, noting he would have to pay to use franchise products.
"Ours is our own mix that we made ourself. It took about a month and a half to concoct. But we got it, and we've been told we're the best ice cream in Scottsbluff," he said.
Rolled ice cream is served in a cup, almost resembling an Italian pastry. As it melts, the flavor unite to more resemble a typical dessert. Favorite flavors included mint chip, coffee and pop tart. Fruit flavors vary from cherry to dragon fruit and prickly pear.
Gold Rush Days turned out to be a blessing by itself, especially Saturday.
"Oh, my gosh! It's been really busy today. We've been enjoying it. We met a lot of interesting people, and made a lot of really cool, different-flavored ice creams," he said.
